Morning Glory Muffins

These muffins have been around since 1978 and are named for the restaurant where they were born, the Morning Glory Cafe, in Nantucket. In 1981 gourmet magazine printed the recipe, and in 1991 it was chosen as one of 25 favorite recipes from the last 50 years.

  • 1 1/4 cup flour
  • 3/4 cup sugar
  • 1 1/4 teaspoon baking soda
  • 1 1/4 teaspoon cinnamon
  • generous pinch of salt
  • 1 1/4 cup shredded carrot
  • 1/3 cups raisins
  • 1/3 cups chopped seeds or nuts
  • 1/3 cup coconut
  • 1 cup chopped apples
  • 2 eggs beaten
  • 2/3 cup vegetable oil
  • 1/2 teaspoon vanilla
Preheat oven to 350 degrees

Step 1: Grease or line a muffin tin.

Step 2: In a large bowl combine flour, sugar, baking soda, cinnamon and salt in a large bowl. Add carrot, raisins, seeds or nuts, coconut and apples. Mix well. Add eggs, oil and vanilla.

Step 3: Add the batter to your muffin tin filling each about 3/4 of the way.

Step 4: Bake for 20-25 minutes.

The trees are already starting to turn here and the Neck is filled with students from the Elementary Middle School, Maine Coast Semester, and Outdoor Classroom.
